Ingredients

  • 1 bunch Broccoli rabe
  • 1.5 cups Cherry tomatoes
  • 4 cloves Garlic
  • 3 tablespoons Olive oil
  • 0.5 teaspoons Crushed red pepper flakes
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 8 cups Water (for blanching)

Directions

Step 1

Fill a large pot with 8 cups of water and bring it to a boil. Add a generous pinch of salt to the water.

Step 2

Trim the tough ends off the broccoli rabe and discard. Cut the broccoli rabe into 3-inch pieces, if necessary, to make it easier to handle.

Step 3

Blanch the broccoli rabe in the boiling water for 2 minutes, then transfer it immediately to an ice bath to stop the cooking process. Drain the broccoli rabe and set it aside.

Step 4

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the cherry tomatoes and cook for 5-6 minutes, stirring occasionally, until they begin to soften and blister.

Step 5
