Ingredients

  • 1 bunch Broccoli rabe
  • 3 tablespoons Olive oil
  • 3 large Garlic cloves
  • 0.5 teaspoons Red pepper flakes
  • 4 Large eggs
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Parmesan cheese (optional)

Directions

Step 1

Trim the ends of the broccoli rabe and remove any tough stems. Wash thoroughly under cold water and set aside.

Step 2

Bring a large pot of salted water to a boil. Blanch the broccoli rabe for 2 minutes, then drain and immediately transfer to an ice bath to stop the cooking process. Drain again and pat dry.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced garlic and sauté for 1-2 minutes, until fragrant and slightly golden.

Step 4

Add the red pepper flakes and blanched broccoli rabe to the skillet. Cook for 4-5 minutes, stirring occasionally, until the broccoli rabe is tender. Season with salt and black pepper, then transfer to a plate.

In the same skillet, add the remaining 1 tablespoon of olive oil. Crack the eggs into the skillet, being careful not to break the yolks.
