Ingredients

  • 2 cups broccoli florets
  • 1.5 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 2 tablespoons butter or olive oil
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons garlic powder

Directions

Step 1

Bring a medium pot of water to a boil and add a pinch of salt. Add the broccoli florets and cook for 3 minutes, or until just tender. Drain the broccoli and rinse under cold water to stop the cooking process. Set aside.

Step 2

Chop the cooked broccoli into small, bite-sized pieces and place them in a mixing bowl. Season with garlic powder, salt, and black pepper. Toss to coat.

Step 3

Place one tortilla on a flat surface. Sprinkle 1/4 cup of shredded cheddar cheese evenly over half of the tortilla. Add 1/2 cup of the seasoned broccoli on top of the cheese, then sprinkle another 1/4 cup of cheese over the broccoli. Fold the tortilla in half to create a semi-circle. Repeat with the remaining tortillas and fillings.

Step 4

Heat 1/2 tablespoon of butter or olive oil in a large skillet over medium heat. Place one quesadilla in the skillet and cook for 2-3 minutes until the bottom is golden brown and crispy. Carefully flip the quesadilla and cook the other side for another 2-3 minutes, or until the cheese is melted and the tortilla is crisp.

Step 5

Repeat the cooking process for the remaining quesadillas, adding more butter or olive oil to the pan as needed.

Once cooked, transfer the quesadillas to a cutting board and let them cool for 1 minute before slicing into wedges. Serve immediately with your favorite salsa, sour cream, or guacamole on the side.
