Ingredients

  • 200 grams broccoli florets
  • 4 large eggs
  • 60 milliliters milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon butter
  • 30 grams grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Directions

Step 1

Wash and cut the broccoli into small florets. Set aside.

Step 2

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well blended. Set aside.

Step 3

Bring a small pot of water to boil. Add the broccoli florets and blanch for 2 minutes. Drain and rinse with cold water to stop the cooking process. Pat the broccoli dry with a paper towel.

Step 4

Heat a non-stick skillet over medium heat and add the butter. Swirl the butter around the pan to coat.

Step 5

Add the blanched broccoli to the skillet and sauté for 2–3 minutes, stirring occasionally, until slightly tender and lightly browned.

Lower the heat to medium-low and pour the egg mixture over the broccoli. Let it cook undisturbed for 1–2 minutes until the edges begin to set.

Sprinkle the grated Parmesan cheese over the eggs and stir lightly to melt the cheese.

Step 9

Remove the pan from heat and garnish with the chopped fresh parsley.

Step 10
