Ingredients

  • 300 grams Broccoli florets
  • 4 pieces Eggs
  • 60 grams Parmesan cheese, grated
  • 2 pieces Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Red pepper flakes (optional)

Directions

Step 1

Wash the broccoli and chop it into bite-sized florets.

Step 2

In a medium saucepan, bring water to a boil. Add a pinch of salt and blanch the broccoli florets for 3 minutes until they are bright green and slightly tender. Drain and set aside.

Step 3

In a medium bowl, crack the eggs and whisk them well. Add a pinch of salt and black pepper to the eggs.

Step 4

Heat the olive oil in a large, non-stick skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
