Ingredients

  • 4 pieces chicken breasts
  • 1 cup broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 4 tablespoons cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Steam the broccoli florets for 3-4 minutes or until slightly tender. Chop them into small pieces after cooling.

Step 3

In a mixing bowl, combine the chopped broccoli, shredded cheddar cheese, cream cheese, garlic powder, and a pinch of salt and pepper. Stir until well mixed.

Step 4

Lay each chicken breast flat on a cutting board and carefully slice into the side to create a pocket, ensuring not to cut all the way through.

Step 5

Stuff each chicken breast pocket with the broccoli-cheese mixture, using toothpicks to seal if necessary.

Step 6

Rub the outside of the chicken breasts with olive oil, then season with paprika, salt, and black pepper.

Step 7

Heat a large oven-proof skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.

Step 8

Transfer the skillet with the chicken to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through to an internal temperature of 165°F (74°C).

Step 9

Remove the chicken from the oven and let it rest for 5 minutes before serving. Enjoy!
