Ingredients

  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 1 large Onion
  • 4 large Eggs
  • 1 cup Sour cream
  • 0.5 cup Mayonnaise
  • 0.25 cup All-purpose flour
  • 1 cup Sharp cheddar cheese, shredded
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 0.5 cup Breadcrumbs
  • 2 tablespoons Butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

Step 2

Bring a large pot of salted water to a boil. Add the broccoli and cauliflower florets and cook for 4–5 minutes, or until slightly tender but not mushy. Drain and set aside.

Step 3

Finely dice the onion. In a skillet, heat the vegetable oil over medium heat. Sauté the onion until soft and translucent, about 5 minutes. Remove from heat and let cool slightly.

Step 4

In a large mixing bowl, whisk together the eggs, sour cream, mayonnaise, flour, garlic powder, salt, and black pepper until well combined.

Fold the sautéed onions, shredded cheddar cheese, and cooked broccoli and cauliflower into the egg mixture until evenly distributed.

Pour the mixture into the prepared baking dish, spreading it out into an even layer.
