Ingredients

  • 250 grams Pasta
  • 200 grams Broccoli florets
  • 250 grams Cherry tomatoes
  • 1 small Red onion
  • 3 tablespoons Extra-virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 30 grams Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

Step 2

While the pasta cooks, prepare the broccoli. Cut the broccoli into bite-sized florets. Steam or blanch them for 2-3 minutes until tender-crisp. Immediately transfer the cooked broccoli into an ice bath to stop the cooking process. Drain and set aside.

Step 3

Halve the cherry tomatoes and finely slice the red onion. Mince the garlic clove.
