Ingredients

  • 4 medium Russet potatoes
  • 1 large Yellow onion
  • 1 cup Shredded sharp cheddar cheese
  • 2 tablespoons Butter
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Chopped parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and cut them into 1/2-inch cubes. Rinse the cubes under cold water to remove excess starch, then pat them dry with a clean kitchen towel.

Step 2

Peel and thinly slice the onion into half-moons.

Step 3

Heat a large skillet over medium heat and add the butter and olive oil. Once melted and shimmering, add the sliced onions to the skillet.

Step 4

Cook the onions for about 10 minutes, stirring occasionally, until they become soft and golden brown. Remove the caramelized onions to a separate plate and set aside.

Step 5

In the same skillet, add the diced potatoes. Spread them into a single layer and let them cook undisturbed for about 5 minutes to develop a golden crust.

Step 6

Sprinkle the garlic powder, paprika, salt, and black pepper evenly over the potatoes. Stir to combine and flip the potatoes so they cook evenly on all sides.

Step 7

Reduce the heat to medium-low and continue cooking the potatoes, stirring occasionally, for another 15-20 minutes or until they are tender and crispy.

Step 8

Return the caramelized onions to the skillet and gently mix them into the potatoes.

Step 9

Sprinkle the shredded cheddar cheese over the potato and onion mixture. Cover the skillet with a lid and let the cheese melt for 2-3 minutes.

Step 10

Remove from heat and garnish with chopped parsley, if desired. Serve warm and enjoy!
