Ingredients

  • 1 cup bulgur wheat
  • 1.5 cups boiling water
  • 2 cups Italian parsley
  • 1 cup fresh mint leaves
  • 2 large ripe tomatoes
  • 1 medium English cucumber
  • 3 stalks green onions
  • 0.25 cup extra virgin olive oil
  • 0.25 cup fresh lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Place the bulgur wheat in a large, heatproof bowl.

Step 2

Pour the boiling water over the bulgur wheat and cover the bowl with a plate or plastic wrap. Let it sit for 10-15 minutes, or until the bulgur has absorbed the water and softened.

Step 3

Fluff the bulgur with a fork and let it cool to room temperature.

Step 4

While the bulgur is cooling, prepare the vegetables and herbs. Finely chop the parsley and mint leaves. Dice the tomatoes and cucumber, and slice the green onions thinly.

Step 5

In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.

Step 6

Once the bulgur has cooled, combine it with the parsley, mint, tomatoes, cucumber, and green onions in a large salad bowl.

Step 7

Drizzle the lemon dressing over the salad and toss gently to combine, ensuring the dressing coats all the ingredients evenly.

Step 8

Taste and adjust salt and pepper as needed.

Step 9

Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Step 10

Serve cold or at room temperature as a side dish or a light main course.
