Ingredients

  • 2 cups green beans, trimmed
  • 1.5 cups white or cremini mushrooms, sliced
  • 1 unit onion, large, diced
  • 3 units hard-boiled eggs
  • 0.75 cups walnuts, toasted
  • 3 tablespoons olive oil
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic, minced
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Fill a medium-sized pot with water and bring it to a boil. Add the trimmed green beans and cook for 4-5 minutes, until tender but still bright green. Drain and set aside to cool slightly.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and cook, stirring occasionally, for 8-10 minutes, until deeply caramelized. Remove and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and cook the mushrooms for 5-7 minutes, stirring occasionally, until softened and most of their liquid has evaporated. Add the minced garlic in the last minute of cooking and stir to combine. Remove from heat and let cool slightly.

Step 4

In a food processor, combine the cooked green beans, caramelized onions, sautéed mushrooms, hard-boiled eggs, toasted walnuts, salt, and black pepper. Pulse the mixture until it reaches a rough, spreadable consistency. Be careful not to over-process as you want some texture to remain.

Step 5

Taste the mixture and adjust seasoning if necessary, adding more salt or pepper to taste.

Step 6

Transfer the vegetarian chopped liver to a serving dish and garnish with chopped parsley, if desired.

Step 7

Serve chilled or at room temperature with crackers, sliced bread, or fresh vegetable sticks. Enjoy!
