Ingredients

  • 4 large eggs
  • 2 tablespoons milk
  • 1 tablespoon unsalted butter
  • 3 ounces brie cheese
  • 4 whole cherry tomatoes
  • 1 tablespoon fresh parsley
  • 1 tablespoon fresh chives
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Crack the eggs into a medium-sized bowl. Add the milk, salt, and black pepper. Whisk until fully combined and slightly frothy.

Step 2

Dice the cherry tomatoes into small pieces and chop the parsley and chives finely. Set them aside.

Step 3

Remove the rind from the brie cheese and cut it into 1/2-inch cubes.

Step 4

Heat a non-stick skillet over medium heat and melt the butter, swirling to coat the pan evenly.

Step 5

Once the butter is melted and bubbling slightly, pour the egg mixture into the pan. Let it cook undisturbed for about 1–2 minutes or until the edges start to set.

Step 6

Sprinkle the diced tomatoes, brie cubes, parsley, and chives over one half of the omelet.

Step 7

Using a spatula, gently fold the empty half of the omelet over the filling. Cook for another 1–2 minutes until the brie is melted and the omelet is fully cooked but still fluffy.

Step 8

Slide the omelet onto a plate and repeat the process for the second serving if necessary.

Step 9

Serve immediately while hot with an optional side of toasted bread or fresh greens.
