Ingredients

  • 8 ounces Brie cheese wheel
  • 1 sheet Puff pastry sheet
  • 0.25 cup Pitted green olives
  • 0.25 cup Pitted Kalamata olives
  • 0.25 cup Roasted red peppers
  • 1 tablespoon Honey
  • 2 tablespoons All-purpose flour (for dusting)
  • 1 large Egg
  • 1 tablespoon Water

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Lightly flour a clean work surface and roll out the puff pastry sheet until it is large enough to completely wrap the brie wheel.

Step 3

Chop the green olives, Kalamata olives, and roasted red peppers into small pieces. Combine them in a small bowl.

Step 4

Place the brie wheel in the center of the rolled-out puff pastry. Spread the honey over the top of the brie.

Step 5

Spoon the olive and roasted red pepper mixture evenly over the top of the brie.

Step 6

Fold the puff pastry up and over the brie, sealing the edges by pressing them together. Trim any excess pastry and fold neatly into a bundle. Flip the wrapped brie over so the seam side is down, and place it on the prepared baking sheet.

Step 7

In a small bowl, whisk together the egg and water to create an egg wash. Brush the egg wash evenly over the puff pastry.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.

Step 9

Remove from the oven and let it cool for 5-10 minutes before serving. Serve warm with crackers, crostini, or fresh fruit.
