Ingredients

  • 1 pound fresh white fish (snapper, halibut, or sea bass)
  • 0.75 cup lime juice
  • 0.25 cup lemon juice
  • 2 tablespoons orange juice
  • 1 mango (diced)
  • 0.5 cup pineapple (diced)
  • 1 avocado (diced)
  • 0.25 cup red onion (finely chopped)
  • 0.5 red bell pepper (diced)
  • 1 jalapeño (finely minced, seeds removed for less heat)
  • 0.25 cup cilantro (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups tortilla chips (optional, for serving)

Directions

Step 1

Dice the fresh white fish into small, bite-sized pieces (about 1/2-inch cubes).

Step 2

In a glass or non-reactive bowl, combine the fish, lime juice, lemon juice, and orange juice. Stir to ensure all the fish is coated. Cover and refrigerate for 15 minutes, or until the fish turns opaque and appears 'cooked' by the citrus acidity.

Step 3

While the fish marinates, prepare the other ingredients. Dice the mango, pineapple, and avocado. Finely chop the red onion, red bell pepper, and jalapeño. Chop the cilantro.

Step 4

After 15 minutes, remove the fish from the refrigerator. Drain most of the citrus juices, leaving a small amount in the bowl to maintain moisture and flavor.

Step 5

Gently fold in the mango, pineapple, avocado, red onion, red bell pepper, jalapeño, and cilantro into the fish. Be careful not to break up the avocado too much.

Step 6

Season with salt and black pepper to taste. Stir gently to combine.

Step 7

Serve the ceviche chilled, accompanied by tortilla chips if desired. Optionally, garnish with a few sprigs of cilantro or lime wedges.
