  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 pieces bay leaves
  • 8 ounces wide egg noodles
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tablespoons fresh parsley (chopped, optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper. Place them in the pot and sear for 2-3 minutes on each side until lightly browned. Remove the chicken and set aside.

Step 3

Add the diced onion, sliced carrots, and sliced celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.
