Ingredients

  • 8 oz Tortilla chips
  • 1.5 cups Shredded cheddar cheese
  • 6 slices Cooked bacon, crumbled
  • 4 Large eggs
  • 1 tbsp Unsalted butter
  • 0.5 cup Black beans, rinsed and drained
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 2 stalks Green onions, thinly sliced
  • 1 Avocado, diced
  • 0.25 tsp Salt
  • 0.25 tsp Pepper
  • 1 Jalapeños, sliced (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper or foil for easy cleanup.

Step 2

Spread the tortilla chips evenly across the baking sheet in a single layer.

Step 3

Sprinkle half the shredded cheddar cheese over the chips, ensuring an even layer.

Step 4

Add the crumbled bacon and black beans on top of the cheese.

Step 5

Sprinkle the remaining cheese over the toppings and set the tray aside.

Step 6

In a large skillet, melt the butter over medium heat. Crack the eggs into a bowl, season with salt and pepper, and whisk to combine.

Step 7

Pour the beaten eggs into the skillet and cook, stirring frequently, until soft scrambled and just set (about 3–4 minutes). Remove from heat.

Step 8

Evenly spoon the scrambled eggs over the nachos on the baking sheet.

Step 9

Place the tray in the preheated oven and bake for 5–7 minutes, or until the cheese is fully melted and bubbly.

Step 10

Remove the nachos from the oven and let cool slightly for 2 minutes.

Step 11

Top the nachos with dollops of sour cream, spoonfuls of salsa, diced avocado, and green onions. Add slices of jalapeños if desired.

Step 12

Serve immediately on the tray or transfer to a platter. Enjoy your Brian's Breakfast Nachos!
