Ingredients

  • 2 medium-sized Zucchini
  • 2 medium-sized Eggplant
  • 3 medium-sized Potatoes
  • 4 large Tomatoes
  • 2 large Red bell peppers
  • 4 large Garlic cloves
  • 1 large Yellow onion
  • 0.25 cup (chopped) Fresh parsley
  • 0.25 cup (chopped) Fresh dill
  • 0.5 cup Extra virgin olive oil
  • 2 teaspoons Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and prepare all vegetables: slice the zucchini, eggplant, potatoes, and tomatoes into thick rounds (about 1/4-inch slices). Cut the red bell peppers into strips. Finely chop the garlic and the onion.

Step 3

In a large mixing bowl, combine the sliced zucchini, eggplant, potatoes, tomatoes, and bell peppers. Add the chopped onion, garlic, parsley, dill, oregano, salt, black pepper, and olive oil. Toss everything together until all the vegetables are evenly coated with the seasoning and oil.

Step 4

Transfer the seasoned vegetables into a large baking dish, spreading them evenly. Pour the 1/4 cup of water over the vegetables to help them cook and stay tender.

Step 5

Cover the baking dish with aluminum foil and place it in the oven. Bake for 60 minutes.

Step 6

After 60 minutes, remove the foil from the baking dish. Stir the vegetables gently to ensure even cooking, then bake uncovered for an additional 30 minutes or until the vegetables are tender and slightly caramelized around the edges.

Step 7

Remove the casserole from the oven and let it rest for 5-10 minutes before serving. Garnish with a bit of extra parsley or dill, if desired.

Step 8

Serve warm as a main course with crusty bread or as a flavorful side dish.
