  • 2 tablespoons Olive oil

  • 1 teaspoon Onion powder
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Cayenne pepper (optional)
  • 1 12 oz Beer (can, half-full)

Directions

Step 1

Preheat your grill to medium-high heat (about 375°F/190°C) or preheat your oven to the same temperature.

Step 2

Rinse the chicken under cold water and pat it dry with paper towels. Remove any giblets from the cavity if present.

Step 3

In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, dried thyme, salt, black pepper, and cayenne pepper (if using).

Rub the spice mixture all over the chicken, including inside the cavity and under the skin where possible.

Open the can of beer and pour out (or drink!) about half of its contents, leaving the remaining half in the can.

Carefully place the can of beer upright on a sturdy surface. Lower the chicken onto the can so that the cavity securely surrounds the can, forming a tripod with the chicken’s two legs.

If using a grill, set up for indirect cooking by turning off one burner or pushing the coals to one side. Place the chicken standing upright on the cool side of the grill and close the lid. If baking, place the chicken upright on a baking sheet in the oven.

Cook for about 75-90 minutes, or until the internal temperature of the thickest part of the breast reaches 165°F (74°C) and the thighs reach 175°F (79°C). Rotate the chicken halfway through cooking for even browning.

Carefully remove the chicken from the grill or oven—use tongs and a sturdy spatula to avoid tipping the hot can.

Let the chicken rest for 10 minutes before lifting it off the can (be cautious as the can and liquid will be very hot). Carve and serve immediately.
