Ingredients

  • 3 pounds Beef chuck roast
  • 3 pieces Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Freshly ground black pepper
  • 1 large Onion, sliced
  • 1 cup Beef broth
  • 0.5 cup Red wine (optional)
  • 1 teaspoon Fresh rosemary, chopped
  • 1 teaspoon Fresh thyme, chopped

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Pat the chuck roast dry with paper towels. Season all sides generously with salt and freshly ground black pepper.

Step 3

In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat.

Step 4

Sear the roast on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.

Step 5

Reduce the heat to medium and add the minced garlic to the skillet. Sauté for 1-2 minutes until fragrant.

Step 6

Add the sliced onion to the skillet and cook for another 3-4 minutes, stirring frequently, until the onion begins to soften.

Step 7

Deglaze the skillet by adding the red wine (if using) and scraping up the browned bits at the bottom. Simmer for 2-3 minutes to reduce the liquid slightly.

Step 8

Return the roast to the skillet. Add the beef broth, Italian seasoning, chopped rosemary, and thyme. Ensure the liquid reaches about halfway up the sides of the roast.

Step 9

Cover the skillet or Dutch oven with a lid or tightly with aluminum foil.

Step 10

Transfer the dish to the preheated oven and roast for 3.5 to 4 hours, or until the roast is fork-tender.

Step 11

Halfway through the cooking time, check the liquid levels. If needed, add a bit more beef broth to prevent drying.

Step 12

Once cooked, remove the roast from the oven and let it rest for 10-15 minutes before slicing or shredding.

Step 13

Serve warm with the pan juices drizzled over the top and your choice of sides, such as mashed potatoes, roasted vegetables, or a crusty loaf of bread.
