Ingredients

  • 3 pounds Beef chuck roast
  • 1.5 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 2 medium Carrots, sliced
  • 2 Celery stalks, diced
  • 3 Garlic cloves, minced
  • 1.5 cups Dry red wine
  • 1.5 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 Bay leaf
  • 4 sprigs Fresh thyme
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the beef chuck roast dry with paper towels and season generously with 1 teaspoon of kosher salt and 1 teaspoon of black pepper.

Step 2

Lightly dust the roast with 2 tablespoons of all-purpose flour, ensuring all sides are coated evenly.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the beef for about 3-4 minutes per side, until a golden crust forms. Transfer the beef to the slow cooker.

Step 4

In the same skillet, add the diced onion, sliced carrots, and diced celery. Cook for 4-5 minutes, stirring occasionally, until the vegetables are softened.

Step 5

Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Transfer the cooked vegetables to the slow cooker.

Step 6

Return the skillet to the heat and pour in the red wine. Use a wooden spoon to scrape up any browned bits from the bottom of the pan, then let the wine simmer for 2-3 minutes to reduce slightly.

Step 7

Stir in the beef broth and tomato paste, ensuring the paste is fully dissolved. Pour this mixture over the beef and vegetables in the slow cooker.

Step 8

Add the bay leaf and thyme sprigs on top of the beef. Cover the slow cooker with its lid.

Step 9

Cook on low for 8 hours, or until the beef is fork-tender and easily shreds.

Step 10

Remove the bay leaf and thyme sprigs from the slow cooker. Taste the sauce and adjust seasoning if necessary.

Step 11

Serve the wine-braised beef with its sauce over mashed potatoes, polenta, or crusty bread. Garnish with chopped parsley for a fresh touch.
