Peel and dice the russet potatoes into small, bite-sized cubes.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the potatoes and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and tender. Remove the potatoes from the skillet and set them aside.
In the same skillet, add the remaining 1 tablespoon of olive oil. Crumble the breakfast sausage into the skillet and cook over medium heat for 5-7 minutes, or until browned and fully cooked. Remove the sausage from the skillet and set it aside.
Dice the red bell pepper, green bell pepper, and yellow onion into small pieces. Mince the garlic cloves.
Add the diced vegetables (red bell pepper, green bell pepper, and onion) to the skillet. Sauté for 5 minutes until they are softened. Add the minced garlic and sauté for an additional 1 minute.
Return the cooked potatoes and sausage to the skillet, stirring to combine with the sautéed vegetables. Create 4 small wells in the mixture using the back of a spoon.
Crack one egg into each well. Sprinkle the eggs with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cover the skillet with a lid and cook for 5-7 minutes, or until the eggs are set to your preference.
