Ingredients

  • 4 pieces Large eggs
  • 2 tablespoons Heavy cream
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Butter
  • 2 pieces Ciabatta rolls
  • 4 slices Cheddar cheese
  • 4 pieces Cooked bacon slices
  • 2 tablespoons Mayonnaise
  • 1 cup Baby spinach leaves
  • 1 tablespoon Olive oil

Directions

Step 1

In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.

Step 2

Heat a non-stick skillet over medium-low heat. Add the butter and allow it to melt.

Step 3

Pour in the egg mixture and gently stir with a spatula, cooking the eggs slowly until soft curds form. Remove the scrambled eggs from the heat while still slightly undercooked, as they will continue to cook off the heat.

Step 4

Slice the ciabatta rolls in half horizontally. Spread 1 tablespoon of mayonnaise on the cut side of each top half.

Step 5

On the bottom half of each roll, layer 2 slices of cheddar cheese, 2 slices of cooked bacon, half of the scrambled eggs, and a handful of baby spinach leaves.

Step 6

Place the top halves of the ciabatta rolls back on to form the sandwiches.

Step 7

Brush the outside of each sandwich lightly with olive oil.

Preheat a panini press or a skillet over medium heat. If using a skillet, you can use another heavy pan to press down the sandwich.

Step 9

Grill each sandwich for 2-4 minutes, or until the bread is golden and crispy and the cheese is melted.

Step 10

Allow the paninis to cool for 1-2 minutes before slicing in half. Serve warm and enjoy!
