  • 4 pieces Eggs
  • 1 cup Shredded cheddar cheese

  • 0.25 cup Diced bell peppers
  • 0.5 cup Chopped fresh spinach
  • 2 tablespoons Butter or cooking oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Salsa (optional, for serving)
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

Crack the eggs into a bowl and whisk them with the salt and black pepper until well combined.

Step 2

Heat 1 tablespoon of butter or oil in a large skillet over medium heat.

Step 3

Add the whisked eggs to the skillet and scramble them gently until they are just set but still soft. Remove from heat and set aside.

Step 4

Wipe the skillet clean if necessary, then heat another 1 tablespoon of butter or oil over medium heat.
