In a small bowl, whisk together the eggs, whole milk, salt, and pepper until well combined.
Heat the butter in a non-stick skillet over medium heat. Add the egg mixture and cook, stirring gently, until the eggs are soft and slightly underdone. Remove from heat and let cool.
Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash it until smooth.
Lay a wonton wrapper on a clean surface. Place 1 teaspoon of scrambled egg in the center, followed by a small dollop (about 1/2 teaspoon) of mashed avocado and 1/2 teaspoon of crumbled goat cheese.
Brush the edges of the wonton wrapper lightly with water. Fold the wrapper in half to create a half-moon shape, pressing the edges tightly to seal. Optionally, pleat the edges for a decorative look. Repeat with the remaining wrappers and fillings.
Heat the vegetable oil and sesame oil in a large non-stick skillet over medium-high heat. Arrange the potstickers in a single layer in the skillet, flat side down. Cook for 2-3 minutes, or until the bottoms are golden brown.
Carefully add 1/3 cup of water to the skillet and immediately cover with a lid. Reduce the heat to medium and steam the potstickers for 4-5 minutes, or until the water has mostly evaporated.
Remove the lid and let the potstickers cook for another 1-2 minutes, until the bottoms are crispy again. Transfer to a serving plate and repeat with the remaining potstickers.
Garnish the potstickers with thinly sliced green onions. Serve immediately with optional soy sauce for dipping, if desired.
