Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 4 cups Fresh spinach, chopped
  • 8 Eggs
  • 0.5 cup Whole milk
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 1 teaspoon Dried oregano
  • 1.5 cups Shredded mozzarella cheese
  • 0.5 cup Parmesan cheese, grated
  • 4 cups Day-old bread, cubed
  • 1 cup Cherry tomatoes, halved
  • 2 tablespoons Fresh basil leaves, chopped

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with a bit of olive oil or cooking spray.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it up into small pieces, and cook until browned and fully cooked through. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and diced red bell pepper, and sauté for another 2 minutes. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.

Step 4

In a large mixing bowl, whisk together the eggs, whole milk, kosher salt, black pepper, and dried oregano.

Step 5

Add the cooked sausage, sautéed vegetables, shredded mozzarella cheese, and cubed bread to the egg mixture. Stir until everything is evenly coated and combined.

Step 6

Pour the mixture into the greased baking dish, spreading it out evenly. Sprinkle the grated Parmesan cheese on top, followed by the halved cherry tomatoes.

Step 7

Bake in the preheated oven for 35-40 minutes, or until the casserole is set in the center and the top is golden brown.

Step 8

Remove the casserole from the oven and let it rest for 5 minutes. Sprinkle with fresh basil before serving.

Step 9

Slice into squares and serve warm. Enjoy!
