Ingredients

  • 8 pieces large eggs
  • 0.5 cups whole milk
  • 1 pounds ground breakfast sausage
  • 1 tablespoons vegetable oil
  • 1 pieces red bell pepper, diced
  • 1 pieces green bell pepper, diced
  • 1 pieces yellow onion, diced
  • 3 cups frozen hash browns
  • 1.5 cups shredded cheddar cheese
  • 3 pieces flour tortillas, cut into strips
  • 0.75 cups salsa
  • 0.5 cups sour cream (optional for garnish)
  • 2 tablespoons chopped cilantro (optional for garnish)
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. Set aside.

Step 3

In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked through, breaking it up with a spoon as it cooks. Remove the sausage from the skillet and set it aside, leaving any grease in the pan.

Step 4

Add the vegetable oil to the same skillet and heat over medium-high. Add the diced red bell pepper, green bell pepper, and onion. Sauté for 4-5 minutes or until the vegetables are softened. Remove from the heat and set aside.

Step 5

In the prepared baking dish, layer 1.5 cups of the frozen hash browns evenly across the base.

Step 6

Sprinkle half of the cooked sausage over the hash browns, followed by half of the sautéed vegetables.

Step 7

Place half of the tortilla strips on top, ensuring they’re spread out evenly, then sprinkle with 0.75 cups of shredded cheddar cheese.

Step 8

Drizzle half of the salsa over the layer and pour half of the egg mixture evenly on top.

Step 9

Repeat the layering process: add the remaining hash browns, sausage, vegetables, tortilla strips, and cheese. Finish by drizzling the remaining salsa and pouring the rest of the egg mixture over the top.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 11

Remove the foil and bake for another 15 minutes or until the top is golden brown and the casserole is set in the center.

Step 12

Let the casserole rest for 5-10 minutes before slicing into pieces.

Step 13

Serve warm with optional sour cream and chopped cilantro on top for garnish.
