Ingredients

  • 10 large eggs
  • 0.5 cups heavy cream
  • 1 lb ground breakfast sausage
  • 1 cups shredded cheddar cheese
  • 0.5 cups shredded mozzarella cheese
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 small yellow onion
  • 2 cups spinach leaves
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 1 tbsp olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish with olive oil.

Step 2

In a large skillet over medium heat, add the ground breakfast sausage and cook until browned and cooked through, breaking it apart with a wooden spoon. Once cooked, remove and set aside on a plate lined with paper towels to drain excess grease.

In the same skillet, add the olive oil and sauté the diced red bell pepper, green bell pepper, and yellow onion until softened, about 5 minutes. Add the spinach leaves and cook for another 1-2 minutes until wilted. Remove from heat.
