Preheat your oven to 350°F (175°C) and lightly grease a large baking dish.
Spread the cubed bread onto a baking sheet and toast in the oven for 10-15 minutes until lightly golden and dried out. Set aside to cool.
In a large skillet, melt 2 tablespoons of the butter over medium heat. Add the chopped bacon and cook until crisp, about 5-7 minutes. Remove the bacon and set aside, leaving the rendered fat in the skillet.
Add the diced onion and celery to the skillet and cook in the bacon fat for 5 minutes until softened. Stir in the garlic and cook for another minute.
Add the sliced mushrooms to the skillet and sauté until they have released their liquid and begin to brown, about 6-8 minutes. Remove the skillet from the heat.
