  • 8 cups Day-old bread (cubed)

  • 2 cups Cremini or button mushrooms (sliced)
  • 2 cups Chicken or vegetable broth
  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Fresh sage (chopped, or 1 teaspoon dried)
  • 1 tablespoon Fresh thyme (chopped, or 1 teaspoon dried)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs (lightly beaten)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a large baking dish.

Step 2

Spread the cubed bread onto a baking sheet and toast in the oven for 10-15 minutes until lightly golden and dried out. Set aside to cool.

Step 3

In a large skillet, melt 2 tablespoons of the butter over medium heat. Add the chopped bacon and cook until crisp, about 5-7 minutes. Remove the bacon and set aside, leaving the rendered fat in the skillet.

Add the diced onion and celery to the skillet and cook in the bacon fat for 5 minutes until softened. Stir in the garlic and cook for another minute.
