Ingredients

  • 500 ml Whole milk
  • 100 g White bread (stale, crusts removed)
  • 30 g Unsalted butter
  • 1 medium Onion
  • 6 pieces Cloves
  • 1 leaf Bay leaf
  • 50 ml Double cream (optional)
  • 0.25 teaspoon Ground nutmeg
  • 0 to taste Salt
  • 0 to taste Ground black pepper

Directions

Step 1

Peel the onion and stud it with the cloves by pushing them into the onion all around its surface.

Step 2

Pour the milk into a medium saucepan and add the studded onion, bay leaf, and a pinch of salt.

Step 3

Place the saucepan over medium heat and bring the milk just to a simmer. Reduce the heat to low and let it infuse for 15 minutes, ensuring the milk does not boil.

Step 4

While the milk is infusing, tear the white bread into small pieces. Alternatively, process it into coarse breadcrumbs using a food processor.

Step 5

After 15 minutes, remove the onion and bay leaf from the milk with a slotted spoon, discarding them.

Step 6

Reduce the heat to low, and gradually add the bread pieces or breadcrumbs into the milk while stirring continuously.

Step 7

Cook the mixture on low heat for 10 minutes, stirring occasionally, until the bread sauce thickens to your desired consistency.

Step 8

Stir in the butter and double cream (if using) for added richness, and season with ground nutmeg, black pepper, and additional salt to taste.

Step 9

Transfer the bread sauce to a serving dish, and serve warm as a side dish for roast turkey, chicken, or any other festive meal.
