Ingredients

  • 2 pounds Cucumbers or summer squash
  • 1 large Yellow onion
  • 2 tablespoons Kosher salt
  • 4 cups Ice cubes
  • 2 cups Granulated sugar
  • 1 cup White vinegar
  • 1 cup Apple cider vinegar
  • 2 teaspoons Mustard seeds
  • 1 teaspoon Celery seeds
  • 0.5 teaspoons Ground turmeric
  • 0.25 teaspoons Ground cloves

Directions

Step 1

Wash the cucumbers or summer squash thoroughly and slice them into thin rounds, about 1/8-inch thick.

Step 2

Peel the onion and slice it into thin rings.

Step 3

In a large mixing bowl, combine the sliced cucumbers or summer squash, sliced onions, and kosher salt. Mix well.

Step 4

Cover the mixture with ice cubes and let sit for 2 hours to draw out the excess moisture. Drain and rinse thoroughly to remove the salt.
