Ingredients

  • 1 cup long-grain white rice
  • 1 cup fresh orange juice
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 medium (finely chopped) onion
  • 2 cloves (minced) garlic
  • 1 teaspoon orange zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons (chopped) fresh parsley

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

Step 2

In a medium saucepan, heat the olive oil over medium heat.

Step 3

Add the finely chopped onion and sauté for 2-3 minutes, or until translucent.

Step 4

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 5

Add the rinsed rice to the saucepan and stir well to coat the grains in the oil.

Step 6

Pour in the orange juice and water, and add the orange zest, salt, and black pepper. Stir to combine.

Step 7

Bring the mixture to a gentle boil, then reduce the heat to low and cover the saucepan with a tight-fitting lid.

Step 8

Cook for 18-20 minutes without lifting the lid, or until the rice has absorbed all the liquid and is tender.

Step 9

Remove the saucepan from the heat and let the rice sit, covered, for 5 minutes to steam.

Step 10

Fluff the rice with a fork, mix in the chopped parsley, and serve warm.
