Ingredients

  • 4 pieces (6 ounces each) Sirloin steaks
  • 4 tablespoons Olive oil
  • 6 cloves, minced Garlic
  • 2 whole (zested and juiced) Lime
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Honey
  • 1 whole (deseeded and minced) or 0.5 teaspoon flakes Red chili (or red pepper flakes)
  • 2 tablespoons, chopped Fresh cilantro
  • 2 tablespoons Water

Directions

Step 1

In a medium bowl, whisk together olive oil, minced garlic, lime zest, lime juice (reserving 1 tablespoon for the sauce), cumin, paprika, chili powder, salt, and black pepper to create the marinade.

Step 2

Place the sirloin steaks in a resealable plastic bag or a shallow dish. Pour the marinade over the steaks, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours or up to overnight.

Step 3

Prepare the chile lime sauce by combining 1 tablespoon of lime juice, honey, minced red chili (or red pepper flakes), chopped cilantro, 2 tablespoons of water, and a pinch of salt in a small bowl. Set aside.

Step 4

Preheat your grill or grill pan to medium-high heat. Lightly oil the grates or the pan.

Step 5

Remove the steaks from the marinade and let any excess drip off. Discard the marinade.

Step 6

Grill the steaks for 4-5 minutes per side for medium-rare, or until your desired doneness is reached. Use a meat thermometer to check the internal temperature (130°F for medium-rare, 140°F for medium).

Step 7

Transfer the cooked steaks to a plate and let them rest for 5 minutes to allow the juices to redistribute.

Step 8

Drizzle the chile lime sauce over the steaks or serve it on the side as a dipping sauce.

Step 9

Garnish with additional fresh cilantro if desired, and serve with your choice of sides such as rice, grilled vegetables, or a fresh green salad.
