Ingredients

  • 240 grams Corn kernels (fresh or canned, drained if using canned)
  • 240 milliliters Whole milk
  • 200 grams Granulated sugar
  • 120 milliliters Vegetable oil
  • 3 large Eggs
  • 160 grams Cornmeal (fine)
  • 60 grams All-purpose flour
  • 15 grams Baking powder
  • 2 grams Salt
  • 50 grams Shredded coconut (optional, for extra flavor)
  • 1 as needed Butter or cooking spray (for greasing)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch round or square cake pan with butter or non-stick cooking spray, and lightly dust it with flour. Set aside.

Step 2

In a blender, combine the corn kernels, milk, granulated sugar, vegetable oil, and eggs. Blend on high speed until smooth and creamy, about 1-2 minutes.

Step 3

In a large mixing bowl, sift together the cornmeal, all-purpose flour, baking powder, and salt. If using shredded coconut, add it to the dry ingredients and mix well.

Step 4

Pour the blended wet mixture into the bowl with the dry ingredients. Gently fold the ingredients together using a spatula or wooden spoon, ensuring there are no dry lumps, but do not overmix.

Step 5

Pour the batter into the prepared cake pan, spreading it evenly with a spatula. Tap the pan gently on the counter to release any air bubbles.

Step 6

Place the pan in the preheated oven and bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step 7

Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, gently transfer it to a wire rack to cool completely.

Step 8

Slice and serve the cake warm or at room temperature. Enjoy with a cup of coffee or tea for an authentic Brazilian experience!
