Ingredients

  • 250 grams Tapioca flour
  • 240 milliliters Whole milk
  • 60 grams Unsalted butter
  • 1 teaspoon Salt
  • 2 large Eggs
  • 100 grams Grated Parmesan cheese
  • 100 grams Grated mozzarella cheese

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners.

Step 2

In a medium saucepan, combine the milk, butter, and salt. Heat over medium heat until the butter has melted and the mixture begins to simmer.

Step 3

Remove the saucepan from the heat and immediately add the tapioca flour. Stir vigorously with a wooden spoon until the mixture becomes smooth and forms a cohesive dough.

Step 4

Let the dough cool for about 10 minutes. This will make it easier to incorporate the eggs and cheese later.

Step 5

Once slightly cooled, transfer the dough to a mixing bowl. Add the eggs one at a time, beating well after each addition. The mixture will appear lumpy and sticky at first, but keep mixing until smooth.

Step 6

Fold in the grated Parmesan and mozzarella cheeses until evenly incorporated into the dough.

Step 7

Spoon the dough into the prepared muffin tin, filling each cup about three-quarters full.

Step 8

Bake the cheese bread in the preheated oven for 20-25 minutes, or until puffed and golden on the outside.

Step 9

Remove from the oven and let cool slightly before serving. These are best enjoyed warm for maximum cheesiness!
