  • 2 leaves bay leaves
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 4 cups chicken or beef stock
  • 1 large orange (cut in half)
  • 1 to taste salt
  • 1 to taste black pepper
  • 0.25 cup fresh cilantro (chopped, for garnish)
  • 4 cups cooked white rice (optional, for serving)

Directions

Step 1

Rinse the dried black beans thoroughly and soak them in water overnight or for at least 8 hours. Drain and set aside.

In a large, heavy-bottomed pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the rendered fat in the pot.

Season the beef chuck cubes generously with salt and pepper. In the same pot, brown the beef on all sides in batches. Remove the browned beef and set aside.

Bring the stew to a simmer over medium heat. Once simmering, reduce the heat to low, cover, and cook for 2 to 2.5 hours, stirring occasionally.

Check the beans for tenderness. If they are still firm, continue to cook until soft and creamy.
