  • 1 cup diced tomatoes (canned)
  • 1 cup light beer
  • 1 cup chicken stock
  • 1 teaspoon paprika
  • 1 leaf bay leaf
  • 4 wedges lime wedges (for serving)
  • 2 cups white rice (optional, for serving)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides, then set aside.

In a large skillet or Dutch oven, heat the olive oil over medium-high heat.

Sear the chicken thighs, skin-side down, for about 5-7 minutes until golden brown and crispy. Flip and cook for another 3 minutes on the other side. Remove the chicken and set aside.
