Begin by boiling the whole potatoes in salted water for about 10-15 minutes, until they are fork-tender but not fully cooked. Drain and let them cool completely. Once cooled, peel and slice them into 1/4 inch thick slices.
Dice the smoked bacon into small pieces. Peel and finely dice the onion.
In a large skillet, heat the vegetable oil over medium heat. Add the bacon pieces and cook until they start to render their fat and turn crispy, about 5-7 minutes.
Add the onions to the skillet with the bacon and continue to cook, stirring occasionally, until the onions are soft and golden brown, approximately 5 minutes.
