Ingredients

  • 800 grams waxy potatoes
  • 150 grams smoked bacon
  • 1 medium yellow onion
  • 2 tablespoons unsalted butter
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Begin by boiling the whole potatoes in salted water for about 10-15 minutes, until they are fork-tender but not fully cooked. Drain and let them cool completely. Once cooled, peel and slice them into 1/4 inch thick slices.

Step 2

Dice the smoked bacon into small pieces. Peel and finely dice the onion.

Step 3

In a large skillet, heat the vegetable oil over medium heat. Add the bacon pieces and cook until they start to render their fat and turn crispy, about 5-7 minutes.

Step 4

Add the onions to the skillet with the bacon and continue to cook, stirring occasionally, until the onions are soft and golden brown, approximately 5 minutes.

Step 5

Remove the bacon and onions from the skillet with a slotted spoon, leaving the fat in the skillet. Set the bacon and onions aside.

Step 6

Increase the heat to medium-high and add the butter to the skillet. Once the butter is melted and starts to foam, add the potato slices in a single layer, being careful not to overcrowd the pan. You may need to do this in batches.

Step 7

Let the potatoes cook undisturbed for 5-7 minutes until the undersides are golden brown and crispy. Flip the slices and cook the other side for an additional 5-7 minutes.

Step 8

Return the bacon and onions back to the skillet, stirring gently to combine with the potatoes. Season everything with salt and freshly ground black pepper to taste.

Step 9

Continue to cook for another 2-3 minutes to heat everything through.

Step 10

Garnish the bratkartoffeln with freshly chopped parsley before serving. Serve hot as a side dish or enjoyed on its own.
