Ingredients

  • 2 cups Wheat bran
  • 1 cup Boiling water
  • 2 cups All-purpose flour
  • 2 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 teaspoons Ground cinnamon
  • 0.5 cups Unsalted butter
  • 0.5 cups Granulated sugar
  • 0.5 cups Brown sugar
  • 2 large Eggs
  • 2 cups Buttermilk
  • 1 teaspoons Vanilla extract
  • 1 cup Raisins

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with non-stick spray.

Step 2

In a large mixing bowl, add the wheat bran and pour the boiling water over it. Stir to combine and let it sit for 5-10 minutes to soften the bran.
