Ingredients

  • 2 cups Bran Buds cereal
  • 1.5 cups Buttermilk
  • 1 cup All-purpose flour
  • 1 cup Whole wheat flour
  • 2 teaspoons Baking soda
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.75 cup Granulated sugar
  • 0.5 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried fruit (e.g., raisins or craisins)
  • 0.25 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.

Step 2

In a large mixing bowl, combine the Bran Buds cereal and buttermilk. Let the mixture sit for 10 minutes to soften the cereal.

Step 3

While the cereal soaks, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt in a separate bowl.

Step 4

After the cereal has softened, stir in the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.

Step 5

Gradually fold the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix, as this can make the muffins dense.

Step 6

Gently fold in the dried fruit and nuts (if using) for added texture and flavor.

Step 7

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 8

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for longer storage.
