Ingredients

  • 450 grams Fresh spinach
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 1 medium Yellow onion
  • 3 large Garlic cloves
  • 3 tablespoons Pine nuts
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the spinach thoroughly under cold water and drain well. If the leaves are large, roughly chop them. Set aside.

Peel and finely chop the yellow onion. Peel and mince the garlic cloves.

Step 3

Heat a large skillet or sauté pan over medium heat. Add the pine nuts and toast them for 2-3 minutes, stirring frequently, until golden and fragrant. Remove the pine nuts from the pan and set aside.

In the same pan, add the olive oil and butter. Once the butter has melted, add the chopped onion and sauté for 3-4 minutes, stirring occasionally, until softened and translucent.
