  • 2 cups Beef broth
  • 0.5 cup Red wine (optional)
  • 1 tablespoon Worcestershire sauce
  • 3 sprigs Fresh thyme sprigs
  • 1 leaf Bay leaf
  • 3 medium Carrots, peeled and sliced into 1/2-inch rounds
  • 8 ounces Mushrooms, sliced
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Season the sirloin tips with salt and black pepper.

Step 2

In a large, heavy-bottomed pot or Dutch oven, heat the olive oil and butter over medium-high heat.

Add the sirloin tips in batches, searing on all sides until browned. Remove and set aside.

Reduce the heat to medium, add the diced onion, and sauté until softened, about 5 minutes.
