Ingredients

  • 12 pieces Large sea scallops
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 0.5 cups Fresh grapefruit juice
  • 2 tablespoons Honey
  • 0.5 cups Walnuts
  • 2 tablespoons Granulated sugar
  • 2 tablespoons Fresh parsley (chopped)
  • 1 whole Grapefruit (zested and segmented)

Directions

Step 1

Pat the sea scallops dry with paper towels and season them with salt and black pepper on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, sear the scallops for 2-3 minutes on each side, or until they develop a golden crust. Remove the scallops from the skillet and set aside.

Lower the heat to medium and add 2 tablespoons of unsalted butter to the same skillet. Once melted, pour in the fresh grapefruit juice and honey. Allow the mixture to simmer for 2-3 minutes, stirring frequently, until slightly reduced.
