Ingredients

  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 large Yellow onions
  • 3 cloves Garlic cloves
  • 2 sprigs Fresh rosemary
  • 1 cup Chicken broth
  • 1 cup Dry white wine
  • 2 tablespoons Unsalted butter

Directions

Step 1

Pat the pork chops dry with paper towels, then season both sides with salt and black pepper.

Step 2

Peel and thinly slice the onions. Mince the garlic cloves.

Step 3

Heat the olive oil in a large skillet or Dutch oven over medium-high heat.

Step 4

Sear the pork chops for 3-4 minutes per side until golden brown. Remove the chops from the skillet and set aside.

Step 5

In the same skillet, reduce the heat to medium and add the sliced onions. Cook for 8-10 minutes, stirring occasionally, until softened and caramelized.

Step 6

Add the minced garlic and rosemary sprigs to the skillet. Cook for 1-2 minutes until fragrant.

Step 7

Deglaze the pan by pouring in the white wine. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Simmer for 2-3 minutes to reduce slightly.

Step 8

Add the chicken broth and stir to combine. Bring the liquid to a gentle simmer.

Step 9

Return the pork chops to the skillet, nestling them into the onions and broth.

Step 10

Cover the skillet with a lid, reduce the heat to low, and braise for 25-30 minutes, turning the pork chops halfway through cooking.

Step 11

After braising, remove the lid and stir in the unsalted butter to enrich the sauce.

Step 12

Taste and adjust the seasoning if necessary.

Step 13

Serve the pork chops topped with the onions and sauce, garnished with additional rosemary if desired.
