  • 3 fresh thyme sprigs
  • 2 bay leaves
  • 1 tablespoon butter
  • 1 tablespoon brown sugar

Directions

Step 1

Preheat your oven to 325°F (160°C).

Season the lamb shanks generously with salt and pepper.

In a large oven-safe Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sear the lamb shanks on all sides until deeply browned, about 10 minutes. Remove from the pot and set aside.
