  • 4 pieces cod fillets
  • 6 pieces plum tomatoes
  • 3 tablespoons olive oil
  • 4 pieces garlic cloves
  • 1 medium yellow onion
  • 1 cup white wine
  • 1 cup vegetable broth
  • 2 sprigs fresh thyme
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Prepare the ingredients: Dice the plum tomatoes and finely chop the yellow onion. Mince the garlic cloves and chop the fresh parsley.

Pat the cod fillets dry with a paper towel. Season both sides with salt and black pepper. Set aside.

In a large, deep skillet or sauté pan, heat the olive oil over medium heat.
