After 35 minutes, uncover and stir in the lemon juice. Simmer for an additional 5 minutes to allow the sauce to thicken slightly and the flavors to meld.
Remove the skillet from the heat. Discard the thyme sprigs and bay leaves. Garnish the chicken with chopped parsley before serving.
