  • 6 pieces chicken thighs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 0.5 cup dry white wine
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken thighs on both sides with salt and black pepper.

Step 2

Heat olive oil in a large Dutch oven or heavy skillet over medium-high heat.

Add the chicken thighs skin-side down and sear until golden brown, about 5-6 minutes on each side. Transfer the chicken to a plate and set aside.

In the same pot, add the chopped onion, sliced carrots, and sliced celery. Sauté the vegetables for about 5 minutes until they start to soften.
