Ingredients

  • 1 lb ground beef
  • 0.5 lb ground pork
  • 2 tbsp taco seasoning
  • 0.5 cup breadcrumbs
  • 1 large egg
  • 0.5 cup shredded cheddar cheese
  • 1 small jalapeño, finely diced (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 2 tbsp fresh cilantro, chopped (optional, for garnish)
  • 4 pieces lime wedges (optional, for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, taco seasoning, breadcrumbs, egg, shredded cheddar cheese, diced jalapeño (if using), garlic powder, and onion powder.

Step 3

Mix the ingredients thoroughly using your hands or a spatula until evenly combined, but avoid overmixing as it can make the meatballs tough.

Step 4

Scoop out about 1 1/2 tablespoons of the meat mixture and roll it into a ball. Repeat with the remaining mixture to form meatballs, and place them on the prepared baking sheet.

Step 5

Drizzle the meatballs with olive oil to help them brown and stay moist during baking.

Step 6

Bake the meatballs in the preheated oven for 18-20 minutes or until they are fully cooked and reach an internal temperature of 165°F (74°C).

Step 7

Once cooked, remove the meatballs from the oven and let them rest for a few minutes.

Step 8

Garnish with chopped fresh cilantro, if desired, and serve with lime wedges for an extra burst of flavor. Enjoy alone, with taco sauce, or as part of a taco bowl!
