Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups brown sugar (packed)
  • 1 teaspoons baking soda
  • 1 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.25 teaspoons ground cloves
  • 0.5 teaspoons salt
  • 1 cups canned pumpkin puree
  • 0.5 cups vegetable oil
  • 0.25 cups whole milk
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 0.5 cups chopped walnuts or pecans (optional)
  • 0.5 cups raisins or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt until well combined.

Step 3

In a separate medium-sized bowl, mix the pumpkin puree, vegetable oil, milk, eggs, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula or wooden spoon until just combined. Be careful not to overmix, as this will make the bread dense.

Step 5

If desired, fold in the chopped nuts, raisins, or chocolate chips for added texture and flavor.

Step 6

Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.

Step 7

Bake in the preheated oven for 55–65 minutes, or until a toothpick inserted into the center of the bread comes out clean or with a few moist crumbs. Start checking around 55 minutes to avoid overbaking.

Step 8

Once baked, remove the loaf pan from the oven and let it cool for 10–15 minutes. Then, transfer the bread to a wire rack to cool completely.

Step 9

Once the bread is cool, slice and serve. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
