Ingredients

  • 12 ounces bow tie pasta (farfalle)
  • 1 pound mild or hot Italian sausage (casings removed)
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 14 ounces crushed tomatoes (canned)
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh basil leaves, chopped
  • 4 quarts water
  • 1 tablespoon salt (for pasta water)

Directions

Step 1

Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of salt to the water, then add the bow tie pasta. Cook according to package instructions until al dente, about 10-12 minutes. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Add the Italian sausage to the skillet. Break it up into small pieces using a wooden spoon and cook until browned and fully cooked, about 5-7 minutes. Remove any excess grease from the skillet if necessary.

Add the minced garlic to the skillet and cook for 1 minute until fragrant.

Pour in the crushed tomatoes and stir to combine. Bring the mixture to a simmer and cook for 5 minutes.

Reduce the heat to low and stir in the heavy cream. Add the grated parmesan cheese and stir until the cheese is fully melted and the sauce is creamy.

Season the sauce with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and a pinch of red pepper flakes, if using. Taste and adjust seasoning as needed.

Add the cooked bow tie pasta to the skillet with the sauce. Toss to coat the pasta evenly. If the sauce is too thick, add some of the reserved pasta water, a few tablespoons at a time, until the desired consistency is reached.

Sprinkle the dish with fresh basil before serving.
